1/2 cup packed brown sugar
2 tsp. cinnamon
2/3 cup white sugar
1/2 cup butter, melted
2 tsp. vanilla extract
1.5 cups flour
1.5 tsp. baking powder
1/2 cup milk
1 large apple, diced into small pieces
Preheat the oven to 350 degrees F.
Combine brown sugar and cinnamon in a small bowl and mix until combined. Set aside.
Combine white sugar and melted butter in a large bowl, whisk until combined.
Add the eggs, milk and vanilla extract to the large bowl and whisk until combined.
Add the flour and baking powder and mix until combined.
In a 9×5 bread pan, spray with non-stick cooking spray.
Place half of the dough mixture into the pan and spread out until it covers the bottom of the pan.
Top with half of the apples and then half of the brown sugar mixture.
Press down with a spatula.
Place the remaining dough mixture on top and spread out to cover.
Place the remaining apples and brown sugar on top.
Bake for 45-50 minutes until a knife can be inserted and come out clean.
Vegan option- substitute melted coconut oil for butter, 2 flaxseed eggs for real eggs and almond milk for regular milk!
