3/4 cup of sugar
2 cups white flour or whole wheat
3 tablespoons unsweetened cocoa powder
1 1/4 teaspoon baking soda
1 1/2 teaspoons ground cinnamon
1/4 teaspoon salt
2 tablespoons of olive oil
2 large eggs
1 cup of unsweetened applesauce
1/4 teaspoon vanilla extract
1 cup of zucchini, finely shredded (1 medium zucchini)
Chocolate chips (optional)
Preheat the oven to 350 degrees F.
Combine the dry ingredients in a medium bowl, sugar, flour, cocoa, baking soda, cinnamon and salt.
In a large bowl, combine the olive oil, eggs, applesauce and vanilla extract. Whisk until combined.
Add the zucchini to the wet ingredients and mix lightly until combined.
Add the dry ingredients to the wet ingredients and mix until combined.
Grease a 9 x 5 baking pan with cooking spray.
Pour the batter into the dish.
Add the chocolate chips on top if desired. I placed it on about a third of it.
Bake for 50-65 minutes.
VEGAN VERSION: substitute regular eggs with 2 flaxseed eggs.
1 egg = 1 tablespoon of ground flaxseeds, 3 tablespoons of water, mix and let sit for five minutes.
