Healthy Pumpkin Oat Donuts!

  • 3 cups of oat flour (measure 3 cups of oats & place in food processor to make the flour)
  • 1/2 cup packed brown sugar
  • 2 tsp. ground cinnamon
  • 1/4 tsp. nutmeg
  • 1/2 tsp. salt
  • 2 tsp. baking powder
  • 2 tbsp. ground flaxseed
  • 1/4 tsp. baking soda
  • 1/2 cup unsweetened applesauce
  • 2 eggs
  • 1 15 oz. can of pumpkin (not pumpkin pie filling, be sure to check)
  • 1 tsp. vanilla
  1. Preheat the oven to 350 degrees F.
  2. In a food processor, make the oat flour (about 1-2 minutes).
  3. Add all the dry ingredients to the food processor – brown sugar, ground cinnamon, salt, baking powder, baking soda & flaxseed. Process for another 1 minute.
  4. In a large bowl, combine all the wet ingredients – applesauce, eggs, pumpkin & vanilla. Whisk together.
  5. Add the dry ingredients to the wet ingredients & mix until well combined.
  6. Coat a donut pan with oil.
  7. Add the donut mix to a large plastic bag.
  8. Cut a small hole at the corner of the bag so you can pipe the filling into the donut pan.
  9. Fill the donut pan, makes about 12 donut. Fill to the top of the pan.
  10. Place in the oven & bake for 15 minutes. Take out of the oven when the top is starting to brown.

You can add raisins to the mix, chocolate chips or melt some chocolate chips and make an icing on top like I did! I left half without chocolate so I can eat it for breakfast! Enjoy!
