Easy Cornbread & Easier Chili!

Chili 

Ingredients 

  • 2 pounds ground beef
  • 1 large onion
  • 2 large or 4 small garlic cloves 
  • 4 – 14.5 oz. cans of diced stewed tomatoes *
  • 1 – 15 oz. can of tomato sauce 
  • 2 tbsp. chili powder 
  • 2 tsp. salt 
  • 2 tsp. dried oregano 
  • 1 – 15 oz. can of kidney beans, liquid included 
  1. Place a large, LARGEST YOU HAVE, pot on medium heat. Add the garlic, onion & ground beef. Cook until beef is browned, breaking it up along the way.
  2. Add the chili powder, salt & oregano, stir until combined. 
  3. Add the stewed tomatoes & tomato sauce & stir until combined. 
  4. Bring to a boil then cover & simmer for 1 hour *. 
  5. Add the kidney beans & let simmer uncovered for another 20 minutes.
  6. Serve with cornbread BELOW!!

* Tips from my cooking experience

  • I used a regular, large pot that fit everything however an even bigger pot was in order that I don’t have. Use a really big pot or you could always split the recipe in half.
  • I bought sliced stewed tomatoes, get diced. The sliced were too big.
  • When covered, stir many times along the way. 
  • If you don’t have an hour to let it simmer, 20 minutes will be ok.

Cornbread 

Ingredients 

  • 1/2 cup of butter (1 stick)
  • 1/2 cup white sugar 
  • 2 eggs 
  • 1 cup buttermilk *
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt 
  • 1 cup of ground cornmeal *
  • 1 cup of white or whole wheat flour 
  1. Preheat the oven to 375 degrees Fahrenheit. 
  2. Place a round cast iron skillet on low heat *.
  3. Add the butter & let melt, you want it on low to just melt it, not cook.
  4. Once the butter is melted, take off the heat & add the sugar & whisk until combined. 
  5. Add the buttermilk & baking soda & whisk until combined.
  6. Add the flour & cornmeal & mix with a spatula until combined. 
  7. Place the cast iron skillet in the oven & bake for 20-30 minutes! 

* Tips from my cooking experience 

  • If you don’t have buttermilk, (I never do), add one tbsp. of lemon juice to a measuring cup. Fill the rest with milk. BUTTERMILK.
  • Get fine ground cornmeal, I found medium ground was too big.
  • If you do not have a cast iron skillet, you can melt the butter in a regular pan & mix everything then transfer to a round baking dish to bake it in.
